Choc Mint Protein Bar

YUM YUM YUM! These are so delicious and like everything I make SO EASY! These are a great substitute for my sweet tooth’s (everyone) out there! How hard is it to resist heading over to the vending machine when 3:00 (or any other time of the day!) comes and grabbing a mars bar! I know its hard! But trust me you won’t even consider that Mars Bar once you have these babies on hand! So make up a batch, cut them into bars and chuck a few into your lunch box so you can have them on hand for that mid arvo slump! EVEN BETTER these are going to keep you satisfied until dinner and won’t cause that spike and then cruel drop in energy that a Mars Bar infamously provides!


Serves: 12 bars


  • 1 cup mixed seeds​

  • 5 tbsp unsweetened desiccated coconut

  • 4 tbsp chia seeds

  • 3 tbsp cacao powder

  • 1/2 cup rolled oats

  • 1 tsp sea salt

  • 4 tbsp coconut oil

  • 180 g fresh dates, pitted

  • 5 tbsp almond butter

  • ½ tsp peppermint essence


  1. Line a 16 x 22 cm baking tin with baking paper, ensuring you leave excess on the sides to pull the slice out

  2. Add the dry ingredients to a food processor and process until crumbly.

  3. Then add wet ingredients and process on high speed until entirely smooth and sticky.

  4. Taste and add more mint flavour if needed

  5. Transfer to the baking tin and, using the back of a spoon press the mixture down very firmly to create an even and compact surface

  6. Set in the freezer for 30 minutes before, removing from pan and cutting into bars

  7. Store the bars in an airtight container in the freezer and they will keep for a few months.

  8. Make sure you slightly thaw them before serving so they don’t break a tooth!
