Spring Vegetable Gnocchi with Golden Wholemeal Gnocchi

How good is Gnocchi? Soft, light…such a DELIGHT! There isn’t much better than a bowl of gnocchi dredged in your favourite sauce! Though I think we all know that the starchy white potatoes and refined white flour used to make most gnocchi is not the healthiest option for you and having the capacity (talent) to make your own can be quite a big task and in most instances lead to disappointment! Though DO NOT FEAR my friends! I have found a SOLUTION (well rather Coles has) and it is called Golden Wholemeal Gnocchi. When you read that did anyone else here the ark angels singing in the background? TRIED AND TESTED this is a FANTASTIC substitute to white store bought gnocchi, is so simple to cook and is high fibre and low GI – WOO! Obviously it is not as fantastic as homemade gnocchi but beggars can’t be choosers and this is a great product! So go on and revel in the beauty of what is Wholemeal gnocchi!


Serves: 4


  • 1 package wholemeal Gnocchi

  • 2 tbsp olive oil

  • 1 brown onion, chopped

  • 3 garlic cloves, minced

  • 1 red capsicum, cubed

  • 2 yellow squash, cubed

  • 1 zucchini, cubed

  • 1 cup cherry tomatoes, whole

  • 1/2 teaspoon salt

  • ½ tsp dried oregano

  • ½ tsp dried sage

  • ¼ tsp garlic powder

  • 1 tbsp olive oil

  • 1 tbsp butter

  • zest of ½ lemon

  • juice of ½ lemon

  • 3 tbsp fresh parsley, chopped

  • 3 tbsp fresh basil, chopped

  • Parmesan, grated, to serve


  1. Cook gnocchi, drain and set aside.

  2. Heat a large fry pan over medium heat. Add olive oil along with onion and garlic cloves. Cook until onion becomes translucent.

  3. Add capsicum and cook for about 2 minutes, then add squash, and zucchini. Cook for about 6-8 minutes, until veggies are soft, then add cherry tomatoes along with salt, oregano, sage, and garlic powder, and cook for another 2 minutes, until the tomatoes begin to burst. Remove veggies from pan and set aside.

  4. To the hot pan, add olive oil and butter. Add the gnocchi and cook for about 1-2 minutes per side, until browned. Then add the veggies back to the pan along with lemon zest, juice, parsley and basil and mix. Sprinkle with parmesan to serve!
