
Ingredients. Serves 1
♥¼ cup bulgur
♥100g chickpeas
♥38g cherry tomatoes, halved
♥25g cucumber, chopped
♥1/8 cup spring onion, sliced
♥10g parsley
♥5g mint
♥50g feta, crumbled
♥1 tbsp lemon juice
♥7 ml olive oil
♥1 garlic
♥Salt and pepper
To do.
1. Cook bulgur according to packet directions and allow to cool
2. In a large bowl add all ingredients up to lemon.
3. In a small bowl whisk lemon juice, oil, garlic, salt and pepper and add to salad.
4. Mix well and enjoy!
