Ingredients. Serves 1
♥¼ cup coriander
♥1 tbsp natural peanut butter
♥1 garlic clove, minced
♥1/2 teaspoon freshly grated ginger
♥1 tbsp lime juice
♥1 tsp lime zest
♥½ tbsp tamari
♥1 teaspoons maple syrup
♥1/3 cup water
♥100g dried soba noodles
♥1 cup fresh broccoli florets
♥1 tbsp chopped roasted peanuts
♥Chili flakes, for serving
1.Prepare the sauce by placing the coriander, peanut butter, garlic, ginger, lime juice, lime zest, tamari, and maple syrup into food processor and pulse until leaves are finely chopped. Thin with 1/3 cup of water. Set aside.
2.Prepare the soba noodles according to package directions. Two minutes before the noodles are finished cooking, add broccoli and steam until bright green and tender-crisp when finished cooking.
3.Drain the noodles and broccoli into a colander, and transfer back to the pot.
4.Stir in sauce, adding up to an additional 1/4 cup of water to thin as needed. Transfer to serving bowls and sprinkle with peanuts and chili flakes. Serve while hot.
