Ingredients. Serves 1.
♥100g white beans, rinsed and drained
♥7ml extra virgin olive oil
♥15ml lemon juice
♥Salt and freshly ground black pepper, to taste
♥2 slices sourdough, toasted
♥1/4 small red onion, thinly sliced
♥50g cucumber, thinly sliced
♥1/2 avocado, pitted and thinly sliced
1. Combine the beans, olive oil, and lemon juice in a medium bowl. Roughly mash until it comes together but is still a little chunky. Season with salt and pepper to taste.
2. Spread the beans on the bread, and top with some red onion, sliced cucumber, avocado, and rocket. Season with additional salt and pepper.
