Ingredients. makes one big bowl.
♥115g whole wheat spaghetti
♥100g boneless, skinless chicken breast, cubed
♥3 tablespoons extra virgin olive oil
♥2 garlic cloves, minced
♥¼ teaspoon red pepper flakes
♥130g chopped kale, ribs removed
♥zest of 1 lemon
♥1 tablespoon lemon juice
♥Salt and pepper to taste
1.Heat one tablespoons of olive oil in a pan. Season cubed chicken with salt and pepper, add it to the skillet, and brown it on each side. Once cooked through, remove from pan and reserve.
2.Meanwhile, boil salted water and cook the pasta as per packet directions and drain.
3.Heat remaining olive oil in pan and add garlic and chilli pepper flakes. Cook until fragrant, about 1 minutes.
4.Add kale, lemon zest, lemon juice and salt, pepper. Cook until kale is tender, about 3 minutes. Add cooked chicken, pasta, stir to coat, and serve immediately.
