Ingredients. for 4 people
♥1 small onion, thinly sliced
♥4 garlic clove, thinly sliced
♥4 cup kale, chopped
♥Salt and pepper
♥200g sun-dried tomatoes, chopped
♥zest and juice of 1lemon
♥500g spelt pasta
♥Pecorino Romano cheese, to serve
1.In a fry pan, warm four tablespoons of the olive oil over low-to medium heat. Add the onion and garlic then cook for 3 minutes. Next add the kale, salt and pepper. Once crispy, turn off heat.
2.Meanwhile bring a pot of water to the boil and cook pasta according the packet directions.
3.One pasta is cooked, drain, return to pot and add, kale mixture, sundried tomatoes and lemon.
4.Serve in a bowl and top with cheese!
