Vegan Sheet pan P A N C A K E S

Ingredients. serves 6

♥3 cups Almond milk

♥1 Tbsp. Apple cider vinegar

♥3 cups wholemeal flour

♥3 Tbsp. Baking powder

♥1 tsp. Salt

♥2 tsp. Vanilla

♥1/3 cup honey

♥1/3 cup olive oil

♥2 ½ cup mixed berries

♥1 tsp. Lemon zest, optional

To do.

  1. Preheat oven to 200 degrees.

  2. In a bowl, combine the almond milk and apple cider vinegar. Let sit while you start the rest so it curdles and aerates.

  3. In a large mixing bowl, combine the flour, baking powder, and salt. Mix to combine.

  4. Add the vanilla, maple syrup and oil to the almond milk mixture, and stir.

  5. Slowly add the wet ingredients to the dry ingredients, whisking together until fully combined. Then fold through the berries.

  6. Stir in the lemon zest and pour into a rectangular pan that is lined with baking paper. Smooth out the batter.

  7. Bake for 30 minutes, slice up and serve with maple syrup !
