HA! But seriously... I LOVE waffles and if you follow my Insta page you will notice nearly every Sunday morning I will cook up a batch of waffles or pancakes! The below recipe is one of my favourite go-to waffle recipes for Autumn, utilising fresh, seasonal apples! Enjoy! x
INGREDIENTS. for 4
1 3/4 cups spelt flour
1/2 tsp baking powder
A pinch of salt
2 eggs, separated
4 tbsp butter, melted
1 3/4 cups almond milk
1/2 tsp vanilla
Tinned apples, sliced, no added sugar, to serve
1. Combine dry ingredients in a bowl.
2. In a separate bowl combine the egg yolks, butter, almond milk, and vanilla and mix in with the dry ingredients.
3. Whip the remaining egg whites until soft peaks form, then fold them into the batter leaving them light and fluffy.
4. Spoon onto your waffle maker and bake until golden and serve with sliced apples!
