Cheesy Vegetarian Omelette


2 eggs

handful Bio Cheese Chedder, grated

1/2 avocado, smashed

1 tbsp EVOO

salt and pepper

1 tomato, sliced


1. Whisk the eggs, salt and pepper together.

2. Heat a pan over medium heat with some oil and pour in egg mixture.

3. Once beginning to set add the cheese to the omelette and flip in half. Continue to cook until cooked through.

4. Meanwhile mix the smashed avocado with salt and pepper and EVOO.

5. Serve the omelette with the smashed avo and sliced tomato.

6. YUM!
